Tired of the same old salads? Try some new combos with your favorite vegetables.
Simple Vinaigrette
3/4 cup olive oil
1/4 cup balsamic vinegar
2 tbsp lemon juice
salt and pepper to taste
2 tbsp **Karam's Original Garlic Sauce
Combine all ingredients and blend until well combined.
Avocado Deliciousness
1 small avocado smashed with a fork
2 tbsp lemon juice
salt and pepper to taste
splash of red wine vinegar
Peel and smash the avocado using a fork in a small bowl. Add the rest of the ingredients, mix and enjoy. This makes a yummy dip or good base for a chunky salad.
Chickpea Smash
1 can of chickpeas, drained
1/4 cup mayonnaise (sub greek yogurt or sour cream)
salt and pepper to taste
2 tbsp lemon juice
1 tbsp mustard
2 tbsp pickle relish (sub capers, chopped dill pickle or another preserve)
use about 1 tbs pickle juice too
2 tbsp **Karam's Original Garlic Sauce
1/4 cup green onion, finely chopped
Using the bottom of a cup or potato masher, mash the chickpeas until there's a chunky paste. Add the rest of the ingredients and mix. Eat this on bread or add vegetables for a chunky salad. I like to add chopped kale, cucumber, apple, red pepper and jicama.
Green Goodness
1/2 cup parsley
1/4 cup mint leaves
1 small avocado
1 clove garlic, coarsely chopped
salt and pepper to taste
1/4 cup lemon juice
Combine all ingredients in a blender. Blend until well combined. If the mixture is too thick, add a bit of water. Store in the fridge and add to salads, over grilled meat or just drink it (kidding but it is really good).
**This sauce is a garlic lover's delight and I always have a bottle in my fridge. It's vegan, lasts a good while in your fridge and is delicious.
